Oatmeal Blueberry Muffins

Oatmeal Blueberry muffins are a new favorite in our household. Kids just love them because they are loaded with blueberries and we eat them guilt free since they have the goodness of whole grains and are not very sweet. These healthy Oatmeal Blueberry muffins are great with a cup of coffee or milk for breakfast or just on their own as an after school snack or actually any time snack. They are moist and very tender. Addition of oatmeal gives a nice texture to these healthy sweet treats.

This recipe has been adapted from Tasteofhome.com. I reduced the amount of sugar and oil plus I have used  whole wheat flour instead of APF as used in the original recipe. I prefer to use fresh Blueberries but feel free to use frozen ones if you wish to. Do not thaw the frozen berries.

 

 

 

Makes : 12 Medium Sized Muffins

Prep Time: 10 Minutes

Baking Time: 20 Minutes

 

Ingredients:

Dry Ingredients:

3/4 Cup Whole Wheat Flour

3/4 Cup Oatmeal

1/2 tsp salt

1/2 tsp cinnamon powder

2 tsp baking powder

1 cup Brown Sugar

 

Wet Ingredients :

1/3 cup cooking oil

1 large egg

1/3 cup milk (  I’ve used 2% )

1 cup Blueberries ( I’ve used fresh )

Optional Step : Topping/ Dusting- You will need another 2 tbsp of brown sugar and 1/2 tsp of cinnamon. Mix these together.

 

 

Directions

Line the muffin tin with cupcake liners. Turn on the oven and set it to 400 F.

Mix all the dry ingredients in a medium bowl.

In a small bowl mix all the wet ingredients ( except Blueberries). Pour this mixture over the dry ingredients .

Now you have the dry and wet ingredients together in the medium bowl. Mix them together with a whisk. Now add the blueberries and give a final mix. Pour the batter in the muffin tin, not more than 3/4th full. If you are using the topping material,  now is the time to sprinkle a little bit of brown sugar and cinnamon mix over the batter in muffin tin.  This step is entirely optional . I leave some without the topping as kids don’t like it that much.

Bake at 400 F for 20 minutes.

  7. I don’t make too many things with blueberries other then muffins or pancakes. I just picked up some for muffins for next week. I don’t have any whole wheat flour so I will have to take note for this recipe next time.
