Baked Salmon

Ingredients
  

  • 2 lemons, thinly sliced
  • 2 lbs salmon fillet
  • 1/2 tsp black pepper
  • 1 tsp kosher salt regular sea salt is fine too
  • 3 cloves garlic, minced or 2 tsp good quality garlic powder
  • 1 tsp dried thyme
  • 1 tsp  dried oregano
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 350°. Line a large rimmed baking sheet with parchment and grease with cooking spray. To the center of the parchment, lay lemon slices in an even layer.
  • Season both sides of the salmon with salt and pepper and place on top of lemon slices.
  • In a small bowl, whisk together garlic, thyme, oregano and olive oil. Pour over salmon and gently spread the spice mix using your hands or a pastry brush. Bake until the salmon is cooked through, about 25 minutes.
  • Switch the oven to broil, and broil for 2 minutes, or until the spice mixture has thickened.

Notes

Make sure the salmon is not very thick. Thicker side will need more time to cook.
You may increase the broiling time to 5 minutes if salmon is still uncooked on thicker sides.
Avoid using store bought minced garlic. It masks the natural flavor of salmon. The best alternative to fresh garlic is a good quality garlic powder.
You can also use fresh herbs instead of powdered ones. Use couple of twigs of fresh herbs so that you get about 1 tablespoon of leaves .
You can pre cut salmon into four palm size fillets before baking if you prefer to. 
Some options to pair with this fish : grilled asparagus, Brussel sprouts, carrots, broccoli or sweet potatoes.  Any of your favorite pasta will work too. We like ours with white pasta.
