Sprouts Pilaf

Busy weekdays calls for quick recipes which are flavorful, healthy  and nourishing at the same time. The recipe Im sharing today is very easy to assemble and looks like as if you have spent hours in the kitchen. This recipe has been saved in my drafts for more than a year. I have tested this recipe a few times by trying different ingredients and spices and this is what I have settled in for. But you are free to get creative and try newer veggies and spices if you like. You can make a bigger batch and enjoy the leftovers for couple of days.

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Course: Main Dish

Ingredients

*2 Cups Basmati Rice

1.5 Cup Sprouts ( any )

2 Tbsp Cooking oil ( I used Coconut oil )

2 Bay leaves

1 tsp Cumin seeds

1/2 teaspoon Turmeric

1 tbsp Coriander powder

1 tsp Red Chili Powder

1 tsp Garam Masala

1 Medium Onion , thinly sliced

1/2 Cup diced Bell Peppers

1/2 Cup Diced Carrots

1 tbsp lemon juice

1/4 Cup Chopped Cilantro to garnish

Couple of Spring onions, thinly sliced to garnish

Directions

Boil rice in a rice cooker and use the steamer part of the rice cooker to steam sprouts. That ways rice and sprouts will cook at the same time. If you don’t have a rice cooker or steamer, just cook the sprouts and rice together in a pan.

In a medium pan, heat oil and and add bay leaves, cloves and cumin seeds. Let these sputter on medium heat for 30 seconds. Add turmeric, coriander, red chili powder, garam masala,- mix all the pieces nicely in the pan. Now add onions, carrots and bell peppers. Cook all of them on medium flame for 5 minutes. Sprinkle salt and black pepper. Adjust the amount as per your taste.Now add the boiled rice and sprouts ( steamed or boiled) in the veggie spice mixture . Give it a nice mix so that spices coat the rice nicely. Add 1 tbsp of lemon juice. Mix well and let this sit for 10 minutes before serving. This helps the rice to imbibe all the flavors. Serve with plain yogurt .

Recipe Notes:

*You can use brown rice  or quinoa instead of white rice, especially of you are pre-diabetic or diabetic.

Feel free to substitute other veggies for carrots and Bell Peppers.

Try to steam the sprouts for maximum nutrition. Cooking them along with rice is also good.
