Zucchini Bread

Since it is the beginning of Fall, I am sharing my mother’s famous Zucchini Bread recipe that is so good with a cup of coffee in front of the fireplace. It can be a good after school / work snack too.

You will need :

3 eggs
2 cups sugar
1 cup oil
2 cups grated Zucchini squash
3 teaspoon’s vanilla

IN SEPARATE BOWL :
3 cups flour / whole wheat flour
1/4 teaspoon baking powder
3 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
2/3 cups nuts

Directions :

Beat eggs until foamy. Add next 4 ingredients. Mix lightly, add flour mixture and nuts.
Bake in two large or three small loaf pans at 325 F for 1 hour 15 minutes.

Enjoy with a cup of your favorite hot drink.
