I like so many things about this bread. First, I get to use over riped bananas which, otherwise, are not liked by anyone in the house. Secondly, to bake this easy and delicious bread, I just need a fork and a large spoon to assemble the whole batter. No mixers needed !! Thirdly, it’s a very healthy snack. I have made few changes to the original recipe I got from internet. I have substituted APF with whole wheat flour and also added some nuts and raisins, just a small attempt to make it healthier. The bread still turns out to be moist and flavorful.

Ingredients
2 cups whole wheat flour
1 tsp baking soda
¼ tsp salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
2 cups mashed bananas
¼ tsp cinnamon powder
½ cups raisins
½ cup chopped walnuts
Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan ( or you can use two small loaf pans ).

In a large bowl, combine flour, baking soda, cinnamon powder and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Add nuts and raisins and mix gently. Pour batter into prepared loaf pan.

Bake in preheated oven for about 60 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes.
