Macaroni is quite popular among kids & is probably one of the most frequent lunch box ideas among the mommies.But there are always healthier ways to feed your kids with their favorite meals. Personally, I’ve never liked the famous mac n cheese & I can’t blame my toddler for not liking it either. Cheese is not our family’s favorite ingredient & when needed, I always use it in minimal doses.This dish mimics the looks of the mac & cheese but if you go by nutrition, it’s far more healthier. My son loves this ‘pasta’ . He thinks it’s the same mac n cheese which his friends eat at school with very little cheese ! I’ve used mayonnaise which gives creamy texture & all the veggies increase the nutritive value of this dish.
Serves: 2 Difficulty Level: Very Easy
Cooking Time:10 minutes Ready In: 15 minutes
Course: Salad
Ingredients
1 cup uncooked elbow macaroni ( whole wheat )
1/3 cup diced celery stalk
1/3 cup diced cucumber
1/3 cup diced green bell pepper
1/4 cup low fat mayonnaise
1/2 tablespoon yellow mustard sauce (optional)
1/2 tablespoon vinegar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon dried basil
1/2 teaspoon dried basil
Directions
- Boil pasta as per package instructions & drain it.
- In a large bowl, mix in cooked pasta & all the diced veggies.
- Fold in mayonnaise, mustard, vinegar, salt, pepper & basil.
- Mix again & serve.
Serving Suggestions
- Enjoy this dish as a salad or pair it with your favorite soup to make a complete meal.
- This dish can bring variety to your kid’s lunch box.
- During summers , refrigerate this salad for couple of hours before serving.
Future variations
- If you can’t do without cheese, then add 1/4 cup of grated cheese of your choice.
- Feel free to add other veggies .
- You may use sour cream instead of mayonnaise.
- You can make this salad richer by increasing the quantities of sauces used.
Nutrition
This is a high calorie dish but the veggies balance the calories as they don’t have significant amount of calories. All the veggies used here are good sources of vitamins, minerals & fiber. Another plus is the low sodium 🙂
