Celery, the ‘Edible Cutlery’ is known for its crunch & mild taste. Most of the times,it is used to get that ‘background flavor’ in dishes. No wonder it is frequently added in soups & stews too. When I make this soup I try to keep it simple, refraining myself from using lots of spices as they will mask the unique flavor of celery. If you go by the looks, this soup is a broth with different vegetables which gives a bright color to this otherwise clear soup.
