Finnish Christmas Cookies
With just the right amount of flavor, these are great for Holiday baking or just because you are craving some cookies. The cardamom and cinnamon balance each other very nicely. They are soft when taken out of the oven but as they cool they become sort of crispy/chewy.

- 1 cup Whole Wheat Flour The original recipe uses All Purpose Flour
- 1/4 tsp Teaspoon Baking Soda
- 1 tsp 1 Teaspoon Ground Cinnamon
- 1 tsp Ground Cardamom green
- 1 egg nicely beaten until frothy
- 3/4 cup Sugar
- 1/4 cup Butter
In large bowl, mix together flour, baking soda, cinnamon and cardamom.
In another bowl, beat egg until frothy.
Beat sugar and butter into egg. Mix well.
Add wet ingredients to dry ingredients. Mix until batter is smooth.
Drop by teaspoonfuls onto greased and floured cookie sheet. You can also make small quarter size balls.
Bake in 350° oven for 10 to 12 minutes or until brown.
Decorate them as desired. This is optional.
Enjoy with hot tea.
You can also enjoy these with delicious Hot Chocolate or with Masala Chai.
For decorating the cookies I used whatever I had in my pantry and refrigerator. I used chocolate syrup and frosting – applied them with a small spatula on plain cookies and then added some holiday glitter and sprinkles ( both edible). You can also crush some almonds / pistachios and use them as topping. Be careful if using chocolate syrup, apply only little bit to hold the sprinkles. You can also use cookie frosting available at all the grocery stores but I wanted to use what I already have.
