Savory Pancakes: A Gluten Free and Vegan Breakfast !

Besan/ gram flour/ Chickpea flour is an indispensable food ingredient in Indian cooking. You can dish out appetizers, fritters, curries, paranthas (Indian flat bread)  or even desserts using this faint yellow flour.

It’s important to use the right amount of heat for this pancake to be perfect. If the skillet is too hot then the pancake will be over cooked or sometimes burnt from outside but uncooked inside. Cooking on very low heat may result in a desiccated pancake. So take care of the heat when you plan to cook this one !

Directions: To make the batter – Mix the ingredients of our Savory Pancake packet in a bowl and add 1/2 cup of water to make a pancake like batter.  Make sure there are no lumps of flour. Optional Step:You can also  add 1 Tbsp finely diced onions, ½  tsp grated ginger and 1 Tbsp finely chopped cilantro leaves in the batter.To make pancakes, heat 1/2 teaspoon cooking oil in a medium skillet. Pour about 1/4 cup of batter in the pan. Spread it all over the skillet. Let it cook for couple of minutes on medium flame.Now toss it & cook the other side on medium flame for 2-3 minutes. Serve with masala chai.

 

Mix the dry ingredients with water. Add onions, cilantro and ginger if you like. Make sure there are no knots.

 

Take 1/4 cup of batter, spread evenly and cook for a couple of minutes or until golden. You may brush the top side with oil if its getting dry. This may happen  either when the heat is very high or very low. If your pan is well heated , it will only take a minute to cook each side with very little extra oil.

 

Cooking Suggestions

  • If the batter is thick, pancake will be thick, uncooked from inside. So make sure it has the right consistency.
  • As a beginner, you may keep varying the flame from low medium to high medium. Once you are comfortable stick to medium heat after heating it on high flame.
  • You may add broccoli, cheese, carrots. Just make sure they are finely diced/grated.

 

Serving Suggestions:

  • These pancakes tastes even better when you savor them with masala chai !
  • You can cook them in advance & reheat them just before serving.
