Lime rice is a very popular dish in Southern India. They can be enjoyed hot but tastes as good at room temperature. They are ideal for lunch boxes, picnic lunches or just when you want to eat something tangy ! My family enjoys this as an after school/work snack. Lime juice and peanuts are the two star ingredients. You can also use lemons if you like. Peanuts add an extra crunch to this dish. And yes they are gluten free !!

1 Cup uncooked basmati rice
2 cups water
½ teaspoon Turmeric
½ teaspoon salt
2 tablespoons oil
1 teaspoon black mustard seeds
2 dried red chilli peppers
1 teaspoon split yellow peas ( chana dal)
5-7 fresh curry leaves
½ cup unsalted peanuts
Juice of 1 lime/lemon ( more if you need it tangier)
Rinse rice in water until water runs clear. Drain well.
Cook rice adding water , salt and turmeric in a heavy bottom pan. Bring the water to a boil and then let it cook on medium heat for about 15 minutes. You may also use a rice cooker. If using rice cooker adjust the water level as per the cooker instructions.
Heat oil in a small pan over medium heat. Add mustard seeds and let them pop. Now add red dried chillies, split yellow pea , curry leaves and peanuts. This whole technique is called tempering.
Pour the contents of small pan in a mixing bowl. Add rice, lemon juice and mix well. Add more lime or salt as per your liking. Enjoy with papadums or just like that.
