Gingerbread Cookies

 
 
December gives many good reasons to bake. One of the reasons could be to set the stage for the festive season. It’s a wonderful feeling knowing that your pantry is stocked with home baked goodies during Holidays.
  
Baking reminds me of all my American friends who are so good at baking. Baking comes to them so naturally. One of my friend Amy Salve,  who I have known for last 12 years is not only good baker, she also makes the best masala chai and dosas. She is an inspiration in so many ways. I always  learn something from her every time we meet. Few years ago, she shared her gingerbread cookie recipe. We even got to bake these together at her place. First hand learning experience !
 

Since then, we bake these cookies during Christmas break. My kids love these cookies mainly  for two reasons -unique flavor and their shape.

Preparation Time: 10 minutes
Refrigeration Time: 1 hour
Baking Time: 12 minutes
Ready In : 1 hour 30 minutes
Makes: 3 dozen medium sized cookies
 
 
Ingredients
 
 
 
1 Β½ cups dark molasses
1 cup packed brown sugar
β…” cup cold water
β…“ cup shortening
7 cups APF
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground cinnamon

Directions
 
 
Mix molasses, brown sugar, water and shortening.
Stir in all the dry ingredients and make a dough. Cover and refrigerate for an hour.

Heat oven to 350 F. Roll dough ΒΌ inch thick on a floured board. Cut with a cookie cutter. Place them 2 inches apart on a lightly greased baking sheet. Bake until no indentation appears when pressed, about 10-12 minutes.

I used raisins to decorate them, just before putting them in the oven

Once baked, allow them cool on cooling racks.
