Picnic Sandwiches

Picnics are fun for sure. But what makes them more fun is all the dining experience we have amidst nature and its beauty.  Many a times, we are tempted to pick up junk or unhealthy food for picnics. Maybe once in a while you can do that but what if you go regularly?

Sandwiches- these ones- are so healthy and filled with the goodness of veggies they are just perfect for your next picnic menu. Easy to assemble even if it’s a last minute plan. Pack some fruit and lemonade or any other drink you like to make a complete meal out of these.

Let’s start. These are just the guidelines. Let your creativity guide you in your kitchen:)

To make any of the following sandwiches, I use guacamole/hummus/ mint chutney as spread.


Cucumber Sandwich: Slice cucumber and tomatoes. Use your favorite spread on the bread and then arrange cucumber and tomato slices. Sprinkle salt and pepper as per taste.



Cucumber Sandwiches – best enjoyed cold. Hence great for picnics. I have used guacamole as spread.


Egg sandwiches – Slice one boiled egg and spread mint chutney / guacamole on bread slices. Arrange sliced eggs and tomato slices ( optional) over the spread and sprinkle salt and pepper as per your taste.



Boiled Eggs + Guacamole = Deliciousness


Caprese Sandwiches : These make another good choice for picnics. Take slices of mozzarella cheese and tomatoes. Arrange these on a toast, sprinkle salt, pepper and basil powder.



I use fresh balls of mozzarella cheese and slice them.





For any of the sandwiches above, you may toast the bread slices and spread butter on them before adding the filling.

The pictures above show open faced sandwiches so as to give you an idea on how to arrange the fillings. You would definitely want to use another slice of bread to cover each sandwich making it easier to carry them.

  12. On your Caprese Sandwich, Trader Joe’s has a Balsamic Glaze that makes this my favorite summer time meal. I have it almost every day for lunch with or without bread. It is Yummy!!!!
