Scrambled Eggs

When you have busy mornings, breakfast often takes a backseat. We all know that it is the most important meal of the day, still we tend to skip it. Just like exercise, breakfast helps to boost your metabolism. It also helps you to make better choices regarding your diet throughout the day. A well balanced, healthy breakfast should keep you full and keep your energy up. Start your morning off with some fiber and protein. Here, I’m sharing the recipe of one of my favorite breakfast.

Serves : 1
Ready in : 10 minutes
Course : Breakfast, side dish
Level: Very easy


1 tsp Olive oil
1/4 cup diced button mushrooms
1/4   cup finely diced bell peppers
1 tbsp finely diced onion
2 eggs
A handful of spinach leaves ( roughly chopped)
Salt, pepper as per taste


  • Heat oil in a small pan. Add mushrooms, bell peppers and onions. Cook for about two minutes on medium heat.
  • Now add eggs and spinach leaves. Keep mixing till the eggs are fully cooked.
  • Add salt and pepper as per taste.
  • Enjoy with whole wheat toast or bagel or just by itself.

Cooking Suggestions

  • Chop all the veggies a night before to reduce the cooking time to half on busy mornings.
  • If you don’t have any fresh veggies, its ok to use frozen mixed ones or any other veggies you have handy.


Eggs contain a little bit of all the nutrients our bodies need on a daily basis. They are rich in Choline, and other Vitamins ( A and B group ).
