Baked Mushrooms

Mushrooms, I believe, are always easy to work with. Many a times they are sauteed with other veggies to get a fancy side dish. They can also be used to make a hearty grilled sandwich. And of course as one of the main ingredients in the popular curry. But very rarely do we see these exotic looking, meat like vegetables being cooked alone. That very thought prompted me to create this recipe.

The basis of this dish is simple-make a flavorful marinade & soak mushrooms in it for sometime before baking them. I wanted to keep the marinade simple & light. So I picked up  plain yogurt & mixed in couple of fresh spices which gave the right amount of flavor to the dish. I marinated them for 30 minutes & it worked well-the dish was neither over spiced nor with very little flavor.

 This recipe has a lot of scope for variation. So feel free to use your imagination.

Ingredients

For the marinade
8 medium sized Button Mushrooms
1/2 teaspoon fresh ginger paste
1/2 teaspoon fresh garlic paste
1/4 cup plain yogurt
1/4 teaspoon black pepper
1/4 teaspoon salt
For the Cheese Topping
1 tablespoon paneer
1 tablespoon  4 cheese Mexican blend ( or any grated cheese)
1/4 teaspoon salt
1/4 teaspoon dried basil leaves or kasoori methi Leaves
1 teaspoon cilantro leaves
Directions
  • Wash the mushrooms & wipe them with paper towel. Pop off the  stems from each & keep the round heads aside. Discard the stems.
  • Take yogurt in a small mixing bowl & add in all marinade spices. Soak in the mushrooms, making sure that each mushroom is coated well with the marinade & cover this bowl. Refrigerate for 30 minutes.Note the time & exactly after 20 minutes turn on the oven.
  • Meanwhile, prepare the cheese topping by mixing all the spices & cheese together. 
  • Turn on the oven & preheat at 375 F.
  • When the mushrooms are ready, fill /top each of the marinated mushroom with the cheese mix ( around 1-2 teaspoons) & place all of the stuffed mushrooms on a foiled baking pan.
  • Bake for 20 minutes.
  • Relish with mint sauce or ketchup.

 Cooking Suggestions
  • Use fresh ginger garlic pastes as they reduce the marination time.
  • I wash mushrooms before using them but I know some of you do not. Whatever way you opt for, make sure the button mushrooms are clean & free from any dirt.
  • Use thick yogurt as mushrooms will release some water during baking. So a thicker marinade would still hold all the flavors.

Future variations
  • Next time use different spices/ herbs but try to keep ginger garlic pastes.
  • You may slice mushrooms , marinate them & then top each slice with cheese mix before baking.
  • You may use feta cheese, parmesan or any other cheese of your choice.

Mushrooms are low calorie, cholesterol & sodium free food. They are rich in  B Vitamins & essential minerals.

I can probably go on writing about mushrooms as I ‘ve studied ( & also cultivated ) them in detail during my Masters Programme in Botany. But for my food blog, I think this much information is good enough !
