Macaroni Salad

Macaroni is quite popular among kids & is probably one of the most frequent lunch box ideas among the mommies. But there are always healthier ways to feed your kids with their favorite meals. Personally, I’ve never liked the famous mac n cheese & I can’t blame my toddler for not liking it either. Cheese is not our family’s favorite ingredient & when needed, I always use it in minimal doses. This dish mimics the looks of the mac & cheese but if you go by nutrition, it’s far more  healthier. My son loves this ‘pasta’ . He thinks it’s the same mac n cheese which his friends eat at school with very little cheese ! I’ve used mayonnaise which gives creamy texture  & all the veggies increase the nutritive value of this dish.
