Frisee Egg Salad

This salad is a good substitute for the more popular Caesar salad. Most of the leaves used in the making of this salad have slightly bitter but refreshingly unique taste.The mustard vinaigrette which is freshly prepared, masks the bitterness of this salad.

Ingredients
1 small head Frisee,trimmed
1/4 head Red Endive, sliced lengthwise
1 tablespoon Tarragon leaves
1/4 cup Baby Spinach
6-8 Cherry Tomatoes
2 eggs, hard boiled
1/4 cup Croutons (Optional)
For the Vinaigrette:
1 Tablespoon Minced Scallion
2 Tablespoons Olive Oil
2 Teaspoons Red Wine Vinegar
1 Teaspoon Dijon Mustard
1/4 Teaspoon Salt
1/2 Teaspoon Black Pepper
Directions
  • Vinaigrette: Whisk together scallion,oil,vinegar & mustard in a medium bowl.Season with salt & pepper.
  • Salad: Toss together frisee, endive, spinach & tarragon leaves in a large salad bowl.
  • Drizzle with vinaigrette & toss gently to coat.
  • Top with cherry tomatoes,eggs & croutons (if using them).

Nutrition

  • Excellent source of fiber,minerals & vitamins especially Vitamin A & K.
  • As the salad dressing is home made, this salad is not rich in calories and fats.
