Baked Bell Peppers

For me, Cheese & Bell peppers are always a winning combination. Add some spinach & onion to make the pairing even more delicious. When you bake all these, the result is not only a treat for your eyes but for your taste buds too!

Preparation time:10 minutes     Baking Time:10 minutes
Level: Easy

Ingredients

2 cups Ricotta cheese/ home made Paneer

1 cup spinach, chopped

1/4 cup onion

1 small green chilli , chopped ( optional)

1 Teaspoon dried Oregano

1/2 teaspoon dried Basil

1/2 teaspoon Salt

1/2 teaspoon Black Pepper

8 small Bell Peppers , washed and cut length wise or halved

Directions

  1. Preheat oven at 350 F.

  2. In a small mixing bowl take the cheese & all the chopped veggies.Mix them well.

  3. Now blend in all the spices & mix again.

  4. Stuff each half of the bell pepper with 1tablespoon (approximately) of the above prepared cheese mixture.

  5. Arrange these on a baking tray & bake for 10 minutes.

  6. Serve them hot with with your favorite dipping.

Storage

Try to consume these in a day or two ( if you make a bigger batch ) as the cheese will lose its freshness after that.
