Celery Soup

Celery, the ‘Edible Cutlery’ is known for its crunch & mild taste. Most of the times,it is used to get that ‘background flavor’ in dishes. No wonder it is frequently added in soups & stews too. When I make this soup I try to keep it simple,refraining myself from using lots of spices as they will mask the unique flavor of celery.If you go by the looks, this soup is a broth with different vegetables which gives a bright color to this otherwise clear soup.

Ingredients
 
5 cups water
1 cup diced Carrot
1 1/2  cup Celery stalk,diced
1/4 cup chopped onion
1 cup Broccoli
2 large tomatoes, cut into 5-6 pieces
1 tablespoon minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
 
 
Directions
 
  • Wash all the vegetables before chopping them.
  • Take water in a pressure cooker & add all the veggies.
  • Pressure cook for 7-8 minutes to release steam once.
  • Let the pressure cooker cool down naturally( 15 minutes).
  • Sprinkle salt & pepper and serve hot.
